Enjoy at Breakfast!!

INGREDIENTS
pumpkin / boiled beans /

yellow peeled mung beans
ground ginger /

cooked brown rice
rice flour or wheat flour /

tapioca flour
salt / pepper /

black sesame / oil

 


1. Prepare the crust. In a bowl, put flour, black sesame and salt, and mix with a dry spoon. Add 1 tbsp oil and start with a half cup of water, kneed by hands and add water little by little if necessary. Put oil in a square oven pan, and put and press the crust dough, very thin, to the bottom and the sides. Bake in an oven at 200 ℃ for 20 minutes.
2. Prepare the filling. Cut pumpkin in small chunks and steam.
3. In a cooking pot, boil a little water, then heat pumpkin, ground ginger, salt and pepper together, stir well. Add boiled beans and brown rice. Mix well. Check the taste.
4. Add some tapioca flour, continue stir in low heat until thicker. Put the filling in the crust, and bake in an oven at 180 ℃ for 20 minutes.
5. Cool down and cut in small pieces for serving.

Pumpkin Quiche

INGREDIENTS
holy basil leaves / lemon grass /

garangar / ginger
cumin seeds / fresh chili /

tomatoes/salt / coconut milk /

lemon juice
boiled beans (azuki beans, mung beans, kidney beans or black beans)

 
1. Smash lemon grass, garangar, ginger, cumin seeds and fresh chili. In a bowl mix lemon juice and salt with the herb mix smashed. Then, cut tomatoes in cubes.
2. Blend coconut milk with holy basil leaves. In a bowl, mix all ingredients together. Add water if necessary. Check the taste. 

Serve with rice or rice noodle.

Raw Green Curry with Beans
Sour soup with
green leaves(JORE)

 

A local style soup with greens!!

 

INGREDIENTS
green leaves / dry fermented beans /

tamarind
dry chili / salt / oil
*You can use mustard greens, cabbage,

sweet potato leave,
water ferns or other kinds of green.

 


1. Cut green leaves in small pieces. Boil water in a cooking pot.
2. Smash dry fermented beans in a mortar. When boiled, put salt and dry fermented beans and then green leaves and tamarind.
3. When cooked, check the taste.
4. In a wok, heat oil and fry chili. Fry the green leaves and put them back to the soup in the cooking pot.

INGREDIENTS
soy milk pulp /

boiled potato or pumpkin
cumin seeds / turmeric / ginger /

chili or any spices
basil /

coriander leaves or Chinese celery
tapioca flour / rice flour /salt

 


1. Chop basil or any herbs. Mash the boiled potato or pumpkin.
2. In a bowl, mix soy milk pulp, mashed potatoes, salt, spiceand herbs with tapioca flour, and make small balls. Put some rice flour on the surface. Fry in oil.

Soy Milk Pulp Farfel

 

 

 

 


Another dish with soy milk pulp,

sushi flavor!!

INGREDIENTS
soy milk pulp / carrots /

lettuce / tomatoes
rice paper/ ground white sesame
sugar / salt / vinegar
avocado / soy milk /lemon juice

 


1. Steam soy milk pulp until cooked. Shred carrots. In a bowl, mix steamed soy milk pulp, shred carrots, sugar, vinegar, salt and white sesame.
2. Wrap the above no.1 with a rice paper with lettuce and tomatoes. Put avocado, soy milk, salt and lemon juice and blend till creamy.
3. Serve the spring roll with avocado mayonnaise.
